400g cooked Prawns
Coriander Pesto:
1 bunch coriander
1/3 cup cashews, almonds or pine nuts
1 tablespoon olive oil
2 tablespoons lemon juice
1 clove garlic, chopped (optional)
Italian, sourdough or Ciabatta bread
Peel prawns. Place the pesto ingredients in a food processor and process until just combined, but still coarse. Toast bread, spread with pesto and top with prawns.Serve with wedges of lemon or lime.
