1 1/4 pounds flounder
1/4 cup fat-free French dressing
2 tablespoons grated Parmesan cheese
2 tablespoons minced onion flakes
1 tablespoon lemon juice
1 tablespoon water
NOTE: This dish must marinate in the refrigerator for at least 4 hours
or as long as overnight.
Day One: Arrange fish in a single layer in a shallow baking pan, such as 13x9x2-inches. Combine remaining ingredients in a small bowl, mixing well. Spread mixture evenly over fish. Turn fish to cover both sides with marinade;cover loosely with aluminum foil but turn fish several times during marinating period.
Day Two: Preheat oven to 375°F. Bake
fish uncovered for about 20 minutes or until fish flakes easily when tested
with a fork. For a crisper fish, place it under the broiler for a few minutes
before serving.
